2 peeled Cucumbers, a pinch of salt, 1 large crushed garlic clove, 1 tsp fresh pepper (a pinch of cayenne if you prefer) & 1 tsp. lime or lemon juice
Cut the cucumbers in halves lengthwise and scrape out the seeds, then chop coarsely. Allow to stand for about 10 mins then drain off the liquid. Toss with the garlic lime juice and pepper. Chill. Done.
